Jackfruit (Artocarpusheterophyllus ) is a well know fruit, commonly available in many parts of India, Bangladesh, and many other South Asian countries. (1) The fresh ripe fruits are consumed as fruit whereas the raw, unripe fruits are commonly used as a vegetable. The seeds of the ripe jackfruits are also very nutritious but are usually dried and used as vegetables which are then incorporated in many traditional Indian recipes.

Health benefits of Jackfruit seeds

  1. It helps to improve the immunity of the person. (1)
  2. It has antibacterial property against certain bacteria like E Coli. So, it helps to prevent E Coli infection. It is rich in antioxidants like phenolic compounds. (1)
  3. It contains prebiotics (like oligosaccharide and nonreducing sugar) that stimulate the growth and activity of beneficial bacteria in our gut which is beneficial for maintaining the intestinal microbial balance. 
  4. Jackfruit seeds have the ability to increase the plasma HDL level and reduce plasma levels of LDL, VLDL, cholesterol, and triglycerides. So, an adequate amount of jackfruit seeds should be included in the diets of elderly, cardiac patients, and those having a high cholesterol level. (2)

Snack Recipe-1: Jackfruit Seeds Chips

Ingredients:

Preparation Time: 10 minutes

Cooking method:

  • Cut the sun-dried jackfruit into thin round pieces.
  • Marinate them with salt and turmeric and black pepper powder.
  • Shallow fry these seeds for 5 minutes, at moderate heat. Cook both the sides.
  • Your recipe is ready now, serve it to your kids as a snack item.

Snack Recipe 2: Jackfruit Seeds Cutlets

Ingredients:

  • Jackfruit seeds: 100g
  • Ginger paste: ½ teaspoon
  • Turmeric powder: a pinch
  • Red chilli powder: a pinch
  • Rice powder: 2 teaspoons
  • refined wheat flour (maida): 1 teaspoon
  • Onion (1 small): finely chopped.
  • Salt: As per taste
  • Oil: 3 tablespoons.

Preparation Time: 1 hour

Cooking method:

  • Boil the jackfruit seeds with a pinch of salt, remove the outer white covering, smash the peels with the help of a smasher.
  • Add little ginger paste, turmeric powder, red chilli powder and mix well.
  • Add finely chopped onion and rice powder with it and little refined wheat flour (maida) with it, knead well to form a dough.
  • Take a little part of the dough, make the shape of the cutlet with the help of your finger. Prepare more cutlets with dough.
  • Heat oil in a non-stick tawa and shallow fry all the cutlets at a moderate flame. Cook both the sides.
  • Serve the hot cutlet with mango mustard sauce or green chatney.

Snack Recipe-3: Jackfruit Seed Vada (Palakottai Vadai) 

Ingredients:

  • Gram dal (Chana dal): 50g
  • Sun-dried jack fruit seeds (boiled): 20
  • Onion – 1 (Chopped finely)
  • Curry leaf – 4 or 5 (Chopped finely)
  • Dry Red chilli: 2
  • Fennel seeds (snafu): half teaspoon
  • Cumin seeds (jeera): half teaspoon
  • Ginger paste:  half teaspoon
  • Salt – As per taste
  • Oil – to deep fry

Preparation Time: 30 minutes

Cooking method:

  • Soak chana dal for 4 hours.
  • Boil the jackfruit seeds in a pressure cooker for 5 minutes, drain the water and remove the outer skin of seeds.
  • Dry roast required amounts of jeera, snafu, and red chili together in a Tawa for 2 minutes at a moderate flame. When a nice aroma is coming out, cool it, and then grind it into powder.
  • Chop onions and curry leave finely.
  • Grind the chana dal and boiled jack seeds separately without using any water. (3)

Now mix them well.

  • Add half teaspoon of ginger paste, a pinch of salt, and black pepper. Mix well.
  • Add chopped onion and curry leaves and then add masala powder to it. Finally, all the ingredients are mix together.
  • Prepare round-shaped vada out of it.
  • Heat oil in a kadhai and then deep fry the balls, keep it over a clean tissue paper to remove excess oil.
  • The healthy, yummy snacks are now ready. It can be consumed by anyone. Serve hot with green chutney or tomato sauce. (3)

Snack Recipe-4: Boiled Jackfruit Seeds

It is a common snack for the Oriya people.

Ingredients:

  • Jackfruit Seeds
  • Black salt: As per taste
  • Turmeric powder: a pinch
  • Water
  • Black pepper: as required

Preparation Time: 20 minutes

Cooking method:

  • Jackfruit seeds are dried under the sun for a day.
  • Boil the whole seeds in a Kadhai with water and half spoon of salt for 20 minutes.
  • When cooled, discarding the excess water, taking the seeds, removing its white coat, and brown covering.
  • You can serve the boiled seeds along with little chaat masala. It is a healthy evening snack. Anyone can consume it.
  • You can also pressure cook the seeds which minimize the time and fuel. It takes only 5 minutes.

Snack Recipe-5: Semai (or vermicelli) noodles with Jackfruit Seeds

Ingredients:

  • Semai: 50g
  • Oil: 1 tablespoon
  • Alt: As per taste
  • Turmeric powder: a pinch
  • Carrot (shredded)
  • Beans (finely chopped)
  • Jackfruit seeds (boiled): chopped finely

Preparation Time: 15 minutes

Cooking method:

  • Boil the semai with a pinch of salt for 2 minutes, discard excess water and keep aside.
  • Cut onion, carrot and boiled seeds into thin slices.
  • Heat oil, add chopped onion, carrot and jackfruit seeds. Add a little salt and cook together for 2 minutes.
  • Now add the boiled semai. Mix well. Cook for a minute.
  • Your semai noodles are ready. Serve it as a healthy and tasty breakfast or snack. You may pack it in a tiffin box as a school tiffin for your kids.

5 Desserts Ideas using Jackfruit seeds

Desert Recipe-1: Jackfruit seed sweet (Home-made Sandesh)

Ingredients:

  • Jackfruit seeds: 100g
  • Milk powder: 5 teaspoons (25g)
  • Sugar: 5 teaspoons (25g)
  • Elaichi powder: A pinch

Preparation Time: 20 minutes

Cooking method:

  • Boil the jackfruit seeds in the pressure cooker for 10 minutes, cool it, remove the outer white covering of the seeds as well as a brown coat from each seed.
  • Smash the boiled seeds, mix with milk powder.
  • Take a teaspoon of ghee in a non-stick kadhai, add smashed jackfruit seed and sugar. Cook for ten minutes. Whenever the cooked mixture comes easily out of the kadhai, switch off the gas, add a pinch of cardamom powder, mix well.
  • Divide the mixture into small parts, shape it as oval Sandesh and garnish them with an almond nut.
  • This easily digestible, home-made, nutritious Sandesh can be kept in the refrigerator for 4 to 5 days. Anyone can consume it.
  • Even diabetic patients can consume it, but in that case, don’t add any sugar in it.

Desert Recipe-2: Jackfruit seed payasam /Chakka Kuru Payasam

Ingredients:

  • Sun-dried jackfruit seeds (Boiled): 20
  • Coconut (grated): 1 small
  • Milk: 500 ml
  • Sugar: 100g
  • Cashew nuts: 10
  • Raisins: 10
  • Ghee:
  • Water: As required

Preparation Time: 30 minutes

Cooking method:

  • Boil the jackfruit seeds in a pressure cooker to make it soft. Peel the seeds.
  • Grind the jackfruits and coconut separately using little water to make a fine smooth paste.
  • Boil the milk, add jackfruit seed paste, cook for 5 minutes, add coconut paste, cook for another paste, now add sugar, cashew and raisins. Mix well and cook for 5 minutes, when it becomes semi-solid, switch of the gas and add elaichi powder to it.
  • This healthy and tasty payasam can be given to anyone. It is easy to digest and full of nutrients.

Desert Recipe-3: Jackfruit seed kheer

Ingredients:

  • Jackfruit seeds: 15
  • Jaggery: 100g
  • Fresh coconut milk: 200ml
  • Ghee: One teaspoon
  • Cashew (broken into pieces): 10
  • Coconut (cut into thin slices): 1 tablespoon
  • Cardamom powder: A pinch

Preparation Time: 20 minutes

Cooking method:  

  • Boil the sun-dried jackfruit seeds, peel them, grind them.
  • Melt jaggery in little water, add seed paste, mix well and paste for 5 minutes. Mix coconut milk with it, cook for another 2 minutes and switch off the gas.
  • Heat ghee, fry cashew and coconut slices in it, which are to be added to the jackfruit seed kheer. Add a pinch of cardamom powder and mix all the ingredients.
  • Now your jackfruit seed kheer is ready and cool it and serve to your kids.

Desert Recipe-4: Jackfruit Seed Shake/ Jackfruit seed smoothie/ Jackfruit seed milkshake

Ingredients:

  • Sundried jackfruit seed (boiled): 15 
  • Milk: 500ml
  • Sugar: 20g
  • Roasted almond pieces (For garnishing)

Preparation Time: 20 minutes

Cooking method:

  • Boil the milk and cook them at simmering temperature with occasional stirring to prepare condensed milk.
  • Grind the boiled jackfruit seeds along with sugar.
  • Add the condensed milk with it, mix well.
  • Cool the shake in the freezer for an hour.
  • Garnish the Jackfruit Seed Shake with roasted almonds and serve.

Desert Recipe-5: Jackfruit seed pudding

Ingredients:

  • Jackfruit seeds: 20
  • Milk: 500ml
  • Cardamom: 1
  • Sugar: 2 TBS + as needed (optional)
  • Roasted cashew (cut into pieces): One tablespoon
  • Roasted almond (cut into pieces): One tablespoon

Preparation Time: 20 minutes

Cooking method:

  • Remove the skin of boiled jackfruit seeds and grind them along with sugar and little milk into a smooth paste.
  • Prepare condensed milk by boiling it at a simmering temperature that is cooking it at the low flame with occasional stirring. Now switch off the flame.
  • Cool the condensed milk. Now add seed paste and a pinch of cardamom powder. Blend well in a blender.
  • Caramelize 2 tablespoons of sugar, spread the caramelized sugar on a Pudding tray, and remain as it is for five minutes.
  • Pour the Pudding mixture over the caramel layer.
  • Now add chopped cashew nuts and almonds over it.
  • Keep the pudding tray in your freezer for 4-5 hours until it sets completely.
  • Remould the Pudding and serve it as a chilled dessert.

    Very interesting article about jackfruit seeds. Didn’t know so many recipes could be made out of it. We always used to boil and eat them, sometimes use it in sambhar also.
