What to do? How to manage it? Start utilizing vegetable skin for making fry, curry, etc. Potato is the queen for this tough time. Having rice, dal and potato mean your lunch/dinner is sorted. Ingredients

  • Potato peel (of 3 potatoes)
  • Onion (1 small)
  • Green chili (2 – optional)
  • Semolina (1 teaspoon)
  • Oil (1 tablespoon)
  • Salt (as per taste)
  • Turmeric ( a pinch)
  • Potato peel curry
 

Method

  • Collect potato peels and wash thoroughly
  • Let it dry
  • Chop onion and green chili
  • Heat oil
  • Add onion and green chili
  • Add potato peel
  • Add salt and turmeric
  • Stir for 3minutes
  • Add semolina
  • Stir well
  • Close the lid and let it cook
  • Sprinkle some water if needed and stir in between
  • Once cooked remove the lid and stir for 2 minutes
  • Serve hot with rice and dal.
