1.Vegetarian recipes with jackfruit seed

Veg Recipe-1: Mashed Jackfruit Seed (kathal bichi bhorta recipe)

Ingredients:

  • Sun-dried Jackfruit seeds (Boiled): 20
  • Onion (finely chopped): 1 medium size
  • Tomato (finely chopped): 1
  • Ginger (cut into threads) : half inch
  • Garlic (finely chopped): 5-6 cloves
  • Salt: as required
  • Green chili (finely chopped): 1 or 2
  • Oil: 1 tablespoon

Preparation Time: 15 minutes

Cooking method:

  • Boil the jackfruit seeds in a pressure cooker, cool it, peel the seeds, and smashed it using a smasher.
  • Heat the oil, add chopped garlic and ginger to it, fry for a minute, and then add green chilies.
  • Now add onion, fry until brown, add tomatoes.
  • Fry  and add the smashed jackfruit seeds to it. Mix well. Cook for 2 minutes at medium flame.
  • Now your smashed jackfruit seed is ready. Serve it hot as a side dish with rice and dal.

Veg Recipe-2: Enriched Dal with jackfruit Seeds (kathal bichi diye dal)

Ingredients:

  • Lentil or moong dal: 100g
  • Sun-dried jackfruit seeds: 50g
  • Salt: As required
  • Turmeric powder: As required
  • Oil: 2 teaspoons.
  • Black cumin (kalonji): A pinch
  • Dry red chilies: 2
  • Tomato (1 medium size): Finely chopped.

Preparation Time: 20 minutes

Cooking method:

  • Soak the dal for 2 hours in excess water.
  • Cut the sun-dried seed into halves, shallow fry them.
  • Cook the dals and fried seeds (with a little salt) in a pressure cooker for 10 minutes.
  • Heat oil, add black cumin and dry chilies as tadka, add finely chopped tomatoes and fry for 2 minutes.
  • Now add the boiled dal with jackfruit seeds, little turmeric powder, and cook for 5 minutes.
  • Enriched dal is ready to serve. This tasteful, nutritious dal is very easily digestible which can be given to anyone, from toddlers to the elderly.

Veg Recipe-3: Mixed veg curry with jackfruit Seeds

Ingredients:

  • Potato: 250g
  • Pumpkin: 500g
  • Brinjal: 250g
  • Whole cumin seeds: half teaspoon
  • Dry red chilies: 2
  • Green chilies: 4
  • Coriander leaves (chopped): one handful
  • Oil: One tablespoon
  • Salt or black salt: As required

Preparation Time: 30 minutes

Cooking method:

  • Cut the vegetables in medium size.
  • Peel the boiled jackfruit seeds and cut them into halves.
  • Heat oil and add cumin seeds and dry chilies. Fry for a minute.
  • Now add potato, pumpkin, and then brinjal gradually at 3 minutes intervals. Cook them in covered condition with occasional stirring at low flame. No need to add any water.
  • Now add the jackfruit seeds and cook for another 10 minutes.
  • Then add green chilies and coriander leaves, mix them and switch off the gas.
  • Your healthy and yummy mixed veg curry is ready, take it with rice or chapati during your breakfast, lunch, or dinner.

Veg Recipe-4: Paneer Posto with Jackfruit Seeds (Paneer curry with poppy seeds and jackfruit Seeds)

Ingredients:

  • Panner (cut into small pieces): 250g
  • Jackfruit seeds (Sun-dried): 10
  • Onion (chopped): 2 medium size
  • Poppy seeds: One teaspoon
  • Dry red chilies: 2
  • Cumin seeds (whole): 1/4th teaspoon
  • Salt: As required
  • Sugar: One teaspoon
  • Oil: One tablespoon

Preparation Time: 20 minutes

Cooking method:

  • Boil jackfruit seeds, peel it, and cut into halves.
  • Fry fresh paneer at low flame.
  • Grind dry poppy seeds in your domestic grinder. Mix the powder with a spoon of water to make a thick paste.
  • Add jeera and dry red chilies to hot oil, fry for a minute add onions (chopped), fry until they are brown. Now add jackfruit seeds paste, cook for 2 minutes with constant stirring.
  • Now add poppy seed paste (posto) and fried panner to it. Add half a cup of water, salt, and sugar. Cover with a lid. Cook for 5 minutes. Now your yummy paneer dish is ready. Serve it with rice or chapati.

Veg Recipe-5: Mushroom with Jackfruit Seed

Ingredients:

  • Mushroom: 250g
  • Potato (boiled): 2 medium size
  • Onion (chopped): 4 medium size
  • Tomato (chopped): 2 medium size
  • Sweet corn (boiled): 25g
  • Green peas (boiled): 25g
  • Jackfruit seeds (boiled): 20
  • Garlic (finely chopped): 10 cloves
  • Ginger paste: 1 teaspoon
  • Turmeric powder: half teaspoon
  • Red chili powder: half teaspoon
  • Cumin seed powder: half teaspoon
  • Coriander powder: half teaspoon
  • Salt: As per taste
  • Sugar: one teaspoon
  • Oil: One Tablespoon

Preparation Time: 30 minutes

Cooking method:

  • Wash mushrooms, peel them, cut into pieces and boil them in excess water, salt, and turmeric powder for 5 minutes. Drain excess water.
  • Boil sun-dried jackfruit seeds and potato with skin in a pressure cooker for 5 minutes, peel them, keep aside.
  • Boil the sweet corns and green peas for 3 minutes. Don’t discard the water, instead of preserving it for utilizing it in the gravy preparation.
  • Chop the vegetables and prepare a paste with the required amount of ginger paste, turmeric powder, cumin powder, coriander powder, red chili powder with a tablespoon of water.
  • Heat the oil, add chopped garlic, chopped onion and fry until they become brown.
    Now add mushrooms and jackfruit seeds and fry for 3 minutes. Add the required amount of salt and sugar to it and mix well.
  • Add chopped tomatoes and then masala paste, mix well, cover the pan, cook for 5 minutes.
  • Add boiled potatoes, green peas, and corn along with little water. Cook for another 5 minutes.
  • Now your tasty mushroom sabzi is ready to serve. You may take it with chapati, roti, or fried rice, or plain rice.
  • This yummy dry sabji can also be used as a feeling of home-made tasty roll prepared for the kid’s tiffin.

Veg Recipe-6: Soybean with Jackfruit Seed in white sauce

Ingredients:

  • Jackfruit seeds (boiled): 15
  • Mini soya chunks: 100g
  • Onion (chopped): 2 medium sizes
  • Carrots (chopped): medium sizes
  • Tomato (chopped): 1 medium size
  • Green capsicum: 1 medium
  • Green chilly (chopped): 2
  • Black pepper: half teaspoon
  • Black salt: half teaspoon
  • Basil leaves (optional): 10 leaves

Preparation Time: 30 minutes

Cooking method:

  • Boil the jackfruit seeds and then chop into thin slices.
  • Boil soya chunks and cut onions, carrot, tomato, and capsicum into small pieces.
    Heat oil, add carrots, onions, tomatoes, and capsicum one by one, and fry in the same oil.
  • Now add jack seed slices and soya chunks to it. Cook for 5 minutes.
  • On another Kadai, heat one teaspoon of butter, add garlic slices, then one tablespoon of refined wheat flour (maida) to it, fry for a minute. Now add boiled milk with constant stirring so that no gruel is formed. Cook for 3-4 minutes. Now your white sauce is ready.
  • Now add the white sauce to the fried vegetables. Add black salt and black pepper as per taste. Stir and mix all the ingredients.
  • Your dish is now ready. Serve it with puri or chapati or paratha.

Veg Recipe-7: Jackfruit Seeds chutney

Ingredients:

  • Jack fruit seed (Sun-dried): 250g
  • Coconut (grated): 1 Cup
  • Onion: 1 small
  • Green chilies: 2
  • Black salt: As required
  • Lemon juice: 1 teaspoon

Preparation Time: 10 minutes

Cooking method:

  • Boil the seeds, peel their outer coverings, and cut into small pieces.
  • Add a cup of grated coconut, one small onion (chopped), green chilies, and grind into a paste.
  • Add salt (as required) and lemon juice to it and mix well.
  • Now your jackfruit seed chutney is ready, serve it with chapati.

Veg Recipe-8: Jackfruit Seeds Hummus

Ingredients:

  • Jackfruit seeds (Sun-dried and boiled): 15
  • Sesame seeds (white til): 2 tablespoons
  • Garlic (chopped finely): few cloves
  • Green chilies (chopped finely): 2
  • Salt (as per taste)
  • Black pepper powder: As required
  • Lemon juice: One teaspoon
  • Cumin seeds powder: As required
  • Extra virgin olive oil: 2 teaspoons
  • Coriander leaves (Chopped): As required for garnishing

Preparation Time: 10 minutes

Cooking method:

  • Peel the boiled jackfruit seeds and cut into halves. Few seeds keep aside and grind the rest of the seeds into a smooth paste using little water.
  • Dry roast sesame seeds with occasional stirring until the nutty smells come out. Be careful so that sesame seeds should not be burned. Cool them and grind well with a little amount of olive oil.
  • Add jackfruit seed paste, sesame seed paste, salt, and lemon juice. Grid all together. Now your hummus is ready to serve.
  • For serving, use a dinner plate, transfer the hummus to the center. Spread some olive oil and coriander leaves at the edges of the plate. Add a few pieces of jackfruit seeds over it. Sprinkle the cumin seed powder and black pepper over it.

2. Non-Vegetarian recipes with jackfruit seed

Non-Veg Recipe-1: Big Fish curry with jackfruit Seeds

Ingredients:

  • Any type of big fish like Rui or Katla: 500g
  • Jackfruit seeds: 100g
  • Potato: 2 medium size
  • Tomato chopped: 1 medium size
  • Turmeric powder: Half teaspoon
  • Chilli powder: Half teaspoon
  • Jeera powder: Half teaspoon
  • Cumin seed powder: Half teaspoon
  • Salt: As required
  • Oil: 2 tablespoons

Preparation Time: 30 minutes

Cooking method:

  • Pressure cooked the jackfruit seeds for 5 minutes.
  • Peel the jackfruit seeds.
  • Heat the oil, fry the fish pieces, both the sides.
  • Peel the potato, fry them, add boiled jackfruit seeds and fry well. Then add chopped tomatoes, cook for 2 minutes.
  • Add the masala and a tablespoon of water, cook for another minute.
  • Now add the required amount of water to make the gravy.
  • Add the fried fish, cook them with the gravy for 5 minutes.
  • Now your yummy fish curry is ready to serve.

Non-Veg Recipe-2: Small Fish Masala fry with jackfruit Seeds

Ingredients:

  • Any type of small fish: 250g
  • Jackfruit seeds: 100g
  • Ginger: Half inch piece
  • Garlic: 5-6 cloves
  • Onion: 2 medium size
  • Turmeric powder: Half teaspoon
  • Hing (asafoetida): a pinch
  • Chat masala: a teaspoon
  • Salt: As required
  • Lemon juice: 1 teaspoon
  • Oil: 2 tablespoons

Preparation Time: 30 minutes

Cooking method:

  • Wash the small fishes and marinate them with salt, turmeric powder, and lemon juice. Kept them aside for 20 minutes.
  • Pressure cooked the jackfruit seeds with little salt and turmeric. Then peel seeds and cut into halves.
  • Shallow fry boiled seed.
  • Finely chop ginger, garlic, and onion.
  • Heat the oil and fry all small fishes to make them crunchy.
  • Fry, chopped garlic pieces, ginger slices, and onion slices. Add a pinch of hing (asafoetida) and a teaspoon of chat masala. Mix well.
  • Add the fried small pieces and jackfruit seeds (fried), mix well. Cook for 2 minutes.
    Serve the small fish masala fry with rice or roti.
  • Non-Veg Recipe-3: Chicken Kheema curry with jackfruit seeds

Ingredients:

  • Chicken (breast pieces): 250g
  • Potato: 1 medium size
  • Onion: 2 medium size
  • Ginger: 1inch size
  • Garlic: 10 to 12 cloves
  • Jackfruit seeds: 15
  • Tomato: 1 medium size
  • Corn: 1 whole
  • Green peas: 100g
  • Dry red chilies: 2
  • Turmeric powder: half teaspoon
  • Red chili powder: half teaspoon
  • Coriander powder: half teaspoon
  • Cumin seed powder: half teaspoon
  • Garam masala: As required
  • Bay leaf: 2
  • Lemon juice: 1 teaspoon
  • Salt: As required
  • Oil: 2 tablespoons

Preparation Time: 45 minutes

Cooking method:

  • Boil the sun-dried jackfruit seeds, remove their outer coat (white), cut into halves.
    Marinate chicken pieces with garlic paste, ginger paste, salt, and lemon juice. Remain covered for an hour at room temperature.
  • Cook the chicken pieces in the pressure cooker for 10 minutes, cool it.
  • Cut the vegetables into small pieces. Fry them separately and keep aside.
  • Remove boiled chicken from pressure, separate them into small pieces, and preserve the chicken stock which is to be used later in the same recipe.
  • Prepare masala mix by combining turmeric, chili, cumin, and coriander powders along with little water.
  • Heat oil, add bay leaves, dry red chilies, and groom masala (whole) as a phoron. Now add the boiled chicken, fry for a minute, add the required amount of salt and masala mixture. Cook for 3 minutes at low flame. Now add all the fried vegetables and then half cup of water. Cover with a lid. Cook them for 10minutes.
  • Now your dish (Chicken Kima curry with jackfruit seeds) is ready. Serve it with oven-fresh hot paratha.

Non-Veg Recipe-4: Egg curry with jackfruit seeds

Ingredients:

  • Eggs: 4
  • Onion (chopped finely): 2 medium size
  • Ginger: 1inch size
  • Garlic (chopped into fine threads): 10 to 12 cloves
  • Jackfruit seeds: 15
  • Turmeric powder: half teaspoon
  • Red chili powder: half teaspoon
  • Coriander powder: half teaspoon
  • Cumin seed powder: half teaspoon
  • Garam masala: As required
  • Salt: As required
  • Oil: 2 tablespoons

Preparation Time: 20 minutes

Cooking method:

  • Boil the eggs and jackfruit seeds.
  • Peel the seeds and cut them into small pieces.
  • Remove the eggshells of boiled eggs and marinate them with salt and turmeric powder.
  • Heat oil, fry eggs, and keep them aside.
  • Fry garlic, onions, and boiled seeds. Add ginger paste, turmeric powder, red chili powder, and cumin powder. Mix well.
  • Add 1 cup of water, cook for a few minutes. Now add eggs. Cook for 5 minutes at a moderate flame.
  • Add garam masala powder and then switch off the gas. Serve the yummy egg curry with rice or chapati.

3. Indian Snacks with Jackfruit Seeds

 Snack Recipe 1 : Chatpata Jackfruit Seeds

Ingredients :

  • JackFruit seeds – 12
  • Salt – As per requirement.
  • Chilli Powder – half teaspoon
  • Dhaniya powder – quarter teaspoon.
  • Crushed Pepper Powder – quarter teaspoon.
  • Ghee -1 teaspoon.

Preparation Time : 20 min

Cooking Method :

  • Clean Jackfruit seeds and pressure cook for 4 whistles.
  • Once its cool down , remove the peel carefully.
  • Cut boiled jackfruit seeds into 4 pieces.
  • Take a pan, after it gets heated add teaspoon of ghee.
  • Add boiled seeds pieces, and fry.
  • Add salt and other dry powders.
  • Saute till they become crisp.
  • Serve Hot. Trust me, its a great winter snack.

Snack Recipe 2 : Palakottai Vadai/ Jackfruit seeds fritters

Ingredients :

  • Channa Dal – 1 cup
  • Jack fruit seeds – 20.
  • Onion – 1
  • Green Chili – 2
  • Fennel Seeds – 1 Teaspoon.
  • Ginger – half inch.
  • Curry leaves – 1 sprig.
  • Salt – As per taste.
  • Oil – for shallow fry (not required if using airfryer)

Preparation Time : 45 minutes

Cooking Method :

  • Wash and soak channa dal for an hour in prior.
  • Pressure cook the Jackfruit seeds for 3 whistles or until they become soft.Add little salt while pressure cooking them.
  • Peel the seeds and cut them in 2.
  • Add them into mixer jar or food processor.
  • Add ginger and make a smooth paste. Do not add any water while grinding.
  • Transfer the paste in a mixing bowl.
  • Now grind the soaked chana dal, without adding any water.
  • now add this paste to mixing bowl.
  • Add chopped onions, green chilli, curry leaves, and salt in the mixing bowl.
  • Mix everything and make small lemon sized ball.
  • Shallow fry until they turn goldenand crispy.
  • Serve hot with your evening tea.
